Every evening, Chef Rocky prepares a homemade meal for the 60+ guests staying at the House, offering them the simple joy of a warm plate after a long day at the hospital. These meals remind families they are not alone, and now, we’re bringing that comfort to your kitchen. In our new Cooking with Chef Rocky series, we’re sharing some of our most loved recipes so that you can bring a little of the House’s heart into your home.
Pulled Pork Tater Tot Casserole
This easy, hearty dish is always a crowd-pleaser—perfect for busy weeknights, potlucks, or whenever you want something cozy and satisfying.
Ingredients
- 2 lbs Pulled Pork
- 1 can Corn
- 1 (8 oz) block Cream Cheese, room temperature
- 1 cup Cheddar Cheese (plus extra for topping)
- 1 cup BBQ Sauce
- 2 tbsp BBQ Spice
- Tater Tots (enough to cover the top of the casserole)
- Pan spray
Instructions
- Preheat oven to 350°F.
- In a large bowl, combine pulled pork, corn, cream cheese, cheddar cheese, BBQ sauce, and BBQ spice.
- Transfer mixture to a casserole dish and top with extra cheddar cheese and an even layer of tater tots.
- Lightly sprinkle more BBQ spice over the top and spray the tater tots with pan spray.
- Bake for 45 minutes to 1 hour, or until the tater tots are golden and crispy.
